Labour Day Long weekend marks the end of summer, the start of school and of course hockey evaluations and tryouts.

I think the stress got to T this morning.   This  was him 5 minutes after we got in the car after evaluations.

Labour Day weekend also has killer sales.  I went out with A to buy her a pair of shoes for school and I came home with these beauties.

Hubby wasn’t impressed.  I guess they’re not really the most practical shoes for school but common every girl needs a pair of cowboy boots!

Last night I made another batch of Energy Bites.  This is one particular snack that I always like to keep in the fridge.   They’re packed full of protein, Omega-3 essential fatty acids “the good fat”,  and fiber.  This is the perfect snack to have before a workout or when you’re having a mid afternoon sweet craving.

Energy Bites

Ingredients

  • 1 cup of dry old fashioned oats
  • 2/3 cup coconut flaxes
  • 1/2 cup Peanut Butter or other nut butters
  • 1/2 cup flaxseed
  • 1/2 cup Chocolate Chips
  • 1/3 cup of honey
  • 1 TBS Chia seed
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Mix ingredients in medium sized bowl.  Cover and refrigerate for about an hour.  Once chilled, roll into balls.  These can be stored in an airtight container in the fridge for about 1 week.

You can also substitute some of the ingredients.  Instead of Chocolate Chips you can use Raisins, dried fruit or chopped nuts.  You can also use almond or other nut butter instead of Peanut Butter.
