Chocolate chip pancakes (made with almond milk)

I love Saturday mornings.  The slower pace and tranquility in the house.  Everyone is just so much more relaxed.  Normally the kids are up quite early but it’s 8am and they are still in bed.  The house is never this quiet this time of the day.

The kids always enjoy having pancakes on the weekend.  I thought what better way to wake up then to the smell of pancakes coming from the stove.
I’ve recently been using Almond Milk instead of regular milk.  Almond milk is a nice replacement to cow’s milk.  It has fewer calories and packed full of vitamins.

I found some chocolate chips in the pantry so I decided to whip up a batch of Chocolate chip pancakes using Almond milk.  I actually find the almond milk make the pancakes a lot lighter.

Chocolate Chip Pancakes

Ingredients

  • 4 tablespoons (1/2 stick) unsalted butter
  • 1 cup Almond milk
  • 1 1/4 cups flour
  • 1 tablespoon sugar
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 egg
  • semi sweet chocolate chips
  • Butter, for pan

In a small saucepan, combine the butter and milk. Place over low heat just until warm and the butter is melted. Let cool slightly. In a bowl, combine the flour, sugar, baking powder, and salt; mix well.

In a large bowl, whisk the eggs with a fork. Whisk in the milk mixture. Add the dry ingredients and mix just until barely blended. Add the chocolate chips and mix.

Heat pan and add a bit of butter and melt.  Pour batter for each pancake onto the hot surface and cook until bubbly on the top at which time add the chocolate chips to the pancakes.  Turn and cook until golden brown on the other side, about 30 seconds more.
